Bacon & Broccoli Quiche with Hashbrown Crust


This recipe for 'Bacon & Broccoli Quiche with Hashbrown Crust' has been a family favorite for many years.


The quiche is rich and creamy and bursting with flavor.


If you are in need of a 'stick to your ribs' kind of meal, give this recipe a try.


It goes together quickly and can be made with simple ingredients you probably already have on hand.


For this version, I combined broccoli, bacon, sharp cheddar and colby cheese. 


This recipe can be adapted to fit your tastes, by using different cheeses, vegetables and meats.


Perhaps a nice gruyere with asparagus and ham or some feta with spinach and sausage.


The possibilities are endless.

 

Another option for this recipe is to omit the meat. I will sometimes add another vegetable, such as portobello mushrooms. I am not a meat eater, so I can attest that this recipe is quite delicious sans any meat.

Now, onto the recipe.....

Bacon & Broccoli Quiche with Hashbrown Crust

Makes 6 Servings

- 3 cups shredded Russet Potatoes
- 4 tbsp melted butter
- 6 strips of Bacon, cooked and chopped
- 1 medium Onion, minced
- 1 clove of Garlic, minced
- 1/2 tsp Salt
- 1/2 tsp Black Pepper
- 1 cup of blanched, chopped broccoli
- 1/2 cup Sharp Cheddar Cheese, shredded
- 1/2 cup Colby Cheese, shredded
- 3/4 cup Light Cream
- 3 large Eggs, beaten

~ Preheat oven to 450°.

In a medium mixing bowl, combine Potatoes with melted Butter. Spread Potato mixture into a deep dish pie pan and press to form a crust. Bake crust for approx 20 minutes or until lightly browned.

Reduce oven temperature to 350°. Blend together the Eggs, Cream, Onion, Garlic, Salt and Pepper. Add Cheeses to the cooked crust followed by the Broccoli and Bacon. Pour the egg mixture over the top.

Bake for approximately 40 minutes or until the quiche is a nice golden brown.


Allow the quiche to set for 20 minutes before cutting. Enjoy!
