Welcome to Saturday Sparks 341!
Starting off todays with an oh-so-good falafel bowl.
I like to make a batch of falafels and freeze them for a quick and easy dinner. They can be eaten alone, in a wrap, in pita bread or in a bowl as I have done here. I think they are best served with lots of vegetables and a nice sauce.
This bowl has baked falafel, wild rice, romaine with red onions, cucumbers, roma tomatoes and avocado. I added some oil free toasted corn tortillas on the side with some thinned sriracha mayo as a dip. The Vegan Falafel recipe is from Raw Till Whenever - which I highly recommend.
