This pancake recipe came out of a need to use up some banana's that had reached their prime.
The banana and berries adds just enough sweetness, eliminating the need for sugar.
I added some shredded zucchini to amp up the nutritional value and to take advantage of it's low calorie density. And no, you don't taste the zucchini.
I make these oil free by cooking them on my old, but trustworthy non-stick griddle. If you're having trouble with them sticking, turn the heat down and spritz the pan with a bit of coconut oil.
I will make a batch of these and place them on a cooling rack. Once cool, I layer them between parchment paper and freeze them for a quick breakfast throughout the week.

Sweet Zucchini Pancakes (SOS Free, Vegan)
Makes 2 Servings
- 1 cup oatmeal
- 2 ripe bananas
- 1/2 cup water
- 1/2 tsp baking powder
- 1/2 tsp vanilla
- 1 tsp cinnamon
- 1 medium zucchini, shredded
- 1 cup berries (I like strawberries, blueberries or raspberries)
