Now, onto the recipe:
Vegan Burrito Bowl
Creamy Black Beans:
- 15 oz can black beans (rinsed)
- 1 heaping tsp vegan bouillon
- 1 tsp onion powder
- 2 T vegetable stock
- Place beans, bouillon, onion powder and vegetable stock in blender. Blend until creamy.
- 1 cup chopped romaine
- 1/2 cup cooked rice
- 1/2 cup chopped tomato
- 1/2 cup chopped cucumber
- 1/8 cup chopped red onion
- 1 dollop of Creamy Black Beans
- 1/2 avocado, chopped
- Add all ingredients into a bowl and drizzle with your favorite hot sauce or taco sauce. Add some tortilla strips for a bit of crunch. Other topping ideas include fire roasted corn, salsa, jalapeƱos or cashew sour cream.
I will need to put this easy and so good for me recipe in my summer meal rotation.
