Starting off todays party with another 50/50 plate.
Continuing my journey with Simple Healthy Eating and this is an example of a dinner from this style of eating.
Not only is this dish healthy, but it was quick and easy as well.
The keyword here is 'leftovers'.
Batch cooking is such a wonderful way to simplify our meals.
This dinner includes vegan potato salad (made with potatoes, cashew mayo, scallions, avocado and freshly ground black pepper), smashed potatoes with fresh sage and cucumbers and steamed green beans for the veggie side of the plate.
