Sweet Potato Pizza

 I've been seeing different versions of this pizza around the web and wanted to give it a try. I am so glad I did, as it was quick, easy and delicious! I was finally inspired by @faiths_fresh and her simple take on it. I changed up the ingredients a bit but kept it simple and easy.

As you can see, I like my pizza piled high with all sorts of good for you veggies, but the sky is the limit as to what could be used.

inspired by @faithsfresh - crust: 1 cup sweet potato, 1/2 cup flour, 1 tsp Italian seasoning and 1 tsp onion powder. ##healthyrecipes ##veganrecipes

Now, onto the recipe:

Sweet Potato Pizza

Print Recipe

Makes 2 Servings

  • 1 cup cooked, mashed sweet potato
  • 1/2 cup flour
  • 1 tsp italian seasoning
  • 1 tsp onion powder

- Blend sweet potato with spices and then add in flour to form a dough. Press dough into a circle on on a parchment lined baking sheet. I just pressed it out with my hands. Bake at 350° for 10 minutes, flip over and bake another 10 minutes. Add toppings of your choice - I used marinara, spinach, onions, red bell pepper, mushrooms, vegan parmesan, vegan mozzarella and vegan cheddar. Bake for 10 minutes and then broil until lightly browned.

In recent weeks, I've been sharing the many spring newborns that we have been blessed to see here.

A beautiful doe and fawn have showed up a few times, but as of yet I haven't been able to capture a picture of them.

In their place, I woke to this unexpected surprise the other morning.

Lucky for me, my camera was ready and so was I.

The photo was taken through a window so as to not disturb them.

It may not be the intended shot, but it surely was the next best thing.

Starting off today's party with a sneak peak of a much needed creative break.

Quilt in Progress at Pieced Pastimes

Life takes us in many different directions and we adjust to the ebb and flow, but there are times we find ourselves needing to veer off course in order to bring back balance.

In recent days, such was the case for me.

We've had one too many irons in the fire lately and I was in need of a pause.

This quilted WIP (work in progress) was my reset button.

I pieced the top several years ago, and it's been in the cue patiently waiting its turn to be brought to life with stitches of thread.
