Starting off todays party with a healthy, filling and delicious meal.
Have you ever eaten a chopped salad?
If not, might I suggest you give them a try.
A variety of finely diced vegetables enhance each other and take on a more robust flavor.
For my chopped salad, I started with a base of chopped romaine, spinach, celery, carrots, red bell pepper, red onion and grape tomatoes. My toppings included a cooked sweet potato, brown and wild rice, avocado, red seedless grapes and served with a brown mustard and maple syrup dipping sauce.
