I served this crispy tofu over a bed of strawberry salad with vegan ranch dressing and freshly ground black pepper.

  4. Suzanne, that entree of yours really looks delicious. I am not certain I could stomach tofu, but I'd certainly be willing to try it given this recipe (I pinned from the original link, thank you for that!). Thank you for inviting us in. I'm hoping you're seeing a few signs of spring to come this week.

    1. Thanks Rita! I used to be on the 'no thanks to tofu' train until I figured out how to cook it. It doesn't really have any taste, so seasonings are the key to its flavor. Also, if you freeze, thaw and press it, the texture is much chewier and closer to a meat like consistency. Our snow is starting to melt and I can actually see some patches of grass here and there! I am ready for spring!
