Starting off todays party with a classic lunch.
There are somedays when tomato soup paired with grilled cheese just hits the spot.
For this soup, I used Nora Cooks recipe for Instant Pot Tomato Soup with a couple minor changes. I used water in place of oil to sauté the onions and omitted the sugar and coconut milk.
I like to make my own vegan cheese, but will use store bought from time to time. Vegan cheese companies have really upped their game. For this sandwich, I used Daiya cutting board shreds.
The grilled cheese was made with 9-grain bread that I spritzed with a touch of vinegar to help with browning, Roma tomatoes, vegan pepper jack and cheddar, fresh basil and freshly ground black pepper.
